- 3 medium Ripe bananas
- 1/2 cup (113g) Unsalted butter
- 3/4 cup (150g) Brown sugar
- 2 large Eggs
- 1 tsp Vanilla extract
- 1 1/2 cups (190g) All-purpose flour
- 1 tsp Baking soda
- 1/4 tsp Salt
- 1/4 cup (60ml) Milk (or buttermilk)
- 1/2 cup (optional) Optional: Walnuts/Chocolate chips
Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour mini loaf pans or line them with parchment paper.
Prepare the wet ingredients: In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs, one at a time, ensuring each is fully incorporated. Stir in the vanilla extract and mashed bananas.
Combine the dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
Mix the wet and dry ingredients: Gradually add the dry ingredients into the banana mixture, stirring until just combined. Pour in the milk (or buttermilk) and mix until smooth. Optionally, fold in walnuts or chocolate chips for added texture and flavor.
Bake the loaves: Pour the batter into the prepared mini loaf pans, filling them about 3/4 full. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cool: Allow the loaves to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
