- 2 small ripe bananas
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1/4 cup melted butter
- 1/2 teaspoon vanilla extract
- Optional chopped nuts or chocolate chips
Preheat your oven to 350°F (175°C). Grease a small loaf pan or line it with parchment paper.
Mash the bananas in a large mixing bowl until smooth, with just a few lumps.
Add melted butter to the mashed bananas and mix well. Then add sugar, egg, and vanilla extract. Stir until the mixture is light and combined.
In a separate bowl, sift together flour, baking soda, and salt. Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.
Optional: Stir in any desired mix-ins, such as chocolate chips or chopped nuts.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let it cool for 10 minutes before transferring to a wire rack to cool completely.
