Ingredients
  

  • 2 cups Cooked chicken, shredded
  • 1 cup Seedless grapes, halved
  • 1/2 cup Celery, chopped
  • 1/4 cup Red onion, finely diced
  • 1/2 cup Pecans or walnuts, chopped
  • 1/2 cup Mayonnaise
  • 1/4 cup Greek yogurt (optional)
  • 1 tablespoon Lemon juice
  • 1 tablespoon Dijon mustard
  • To taste Salt and pepper

Instructions
 

  • Step 1: Prepare the chicken.
    If you haven’t pre-cooked your chicken, start by poaching or roasting it. Once cooled, shred or dice the chicken.
  • Step 2: Chop and prep ingredients.
    Halve the grapes, chop the celery, and finely dice the red onion. Toast the nuts if desired.
  • Step 3: Make the dressing.
    In a bowl, mix mayonnaise, Greek yogurt, lemon juice, and Dijon mustard. Whisk until smooth.
  • Step 4: Combine and season.
    In a large bowl, combine the chicken, grapes, celery, red onion, and nuts. Pour the dressing over and fold to coat. Season with salt and pepper.

Notes

    • Can be made ahead of time; keep nuts separate until serving
