Ingredients
  

  • 12 sheets Whole wheat lasagna noodles
  • 2 medium Zucchini
  • 4 cups Spinach
  • 15 oz Ricotta cheese
  • 2 cups Mozzarella cheese
  • 2 cups Marinara sauce
  • 1 large Egg
  • 2 Herbs (basil, oregano)
  • 1 tablespoon Olive oil
  • To taste Salt
  • To taste Pepper

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add zucchini and sauté for about 5 minutes until tender. Then add spinach and cook until wilted, about 2–3 minutes. Season with salt and pepper.
  • In a mixing bowl, combine ricotta cheese, egg, and herbs. Mix until smooth.

  • Layer 4 sheets of whole wheat lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the sautéed vegetables, and a layer of marinara sauce. Repeat this process until all ingredients are used, finishing with noodles topped with marinara sauce and shredded mozzarella.
  • Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  • Allow to cool for 10 minutes before slicing and serving.

Notes

  • Feel free to customize with additional vegetables or protein.
  • This lasagna can be stored in the refrigerator for up to 3–4 days and can be frozen for up to 3 months.
