- 12 sheets Whole wheat lasagna noodles
- 2 medium Zucchini
- 4 cups Spinach
- 15 oz Ricotta cheese
- 2 cups Mozzarella cheese
- 2 cups Marinara sauce
- 1 large Egg
- 2 Herbs (basil, oregano)
- 1 tablespoon Olive oil
- To taste Salt
- To taste Pepper
Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add zucchini and sauté for about 5 minutes until tender. Then add spinach and cook until wilted, about 2–3 minutes. Season with salt and pepper.
In a mixing bowl, combine ricotta cheese, egg, and herbs. Mix until smooth.

Layer 4 sheets of whole wheat lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the sautéed vegetables, and a layer of marinara sauce. Repeat this process until all ingredients are used, finishing with noodles topped with marinara sauce and shredded mozzarella.
Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
Allow to cool for 10 minutes before slicing and serving.
