Ingredients
  

  • 2 large boneless, skinless chicken breasts (or thighs)
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar (or lemon juice)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • Salt, to taste
  • Pepper, to taste
  • 4 cups mixed greens (lettuce, spinach, etc.)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber slices
  • 1/4 cup red onion, thinly sliced
  • 1/2 avocado, sliced
  • Croutons or nuts (optional, for garnish)

Instructions
 

  • Cook the Chicken:
    Heat olive oil in a skillet over medium heat. Season the chicken breasts (or thighs) with salt and pepper.
    Cook the chicken for 6-7 minutes per side until golden brown and cooked through. Remove from heat and let it cool.
  • Prepare the Salad Base:
    While the chicken is cooling, combine mixed greens, cherry tomatoes, cucumber slices, red onion, and avocado in a large bowl.
  • Make the Dressing:
    In a small bowl, whisk together olive oil, balsamic vinegar (or lemon juice), Dijon mustard, honey, salt, and pepper. Taste and adjust the seasoning as needed.
  • Assemble the Salad:
    Slice the cooked chicken and add it to the salad bowl. Drizzle the dressing over the salad and toss gently to coat the ingredients evenly.
  • Serve:
