  • 1 teaspoon baking powder (ensure it's gluten-free)
  • 1 teaspoon vanilla extract (optional, for added flavor)
  • ½ cup dark chocolate chips (optional, or replace with nuts or raisins)

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a loaf pan lightly or line it with parchment paper.
  • Mash the ripe bananas in a mixing bowl until smooth.
  • Add the eggs, almond butter, and vanilla extract to the bananas. Whisk until well-combined.
  • Gradually fold in the baking powder. Stir in optional mix-ins like chocolate chips or nuts.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
