  • 2-3 Ripe bananas
  • 2 tablespoons Matcha powder
  • 1 ½ cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Baking powder
  • ½ teaspoon Salt
  • ¾ cup Sugar (brown or coconut)
  • 2 Eggs
  • ½ cup Melted butter or coconut oil
  • 1 teaspoon Vanilla extract

Instructions
 

  • Preheat the Oven: Begin by setting your oven to 350°F (175°C).
  • Prepare Your Loaf Pan: Grease a 9x5-inch loaf pan with butter or line it with parchment paper.
  • Mash the Bananas: In a spacious mixing bowl, use a fork to mash the ripe bananas until smooth. You’ll need about 1 cup of mashed bananas.
  • Mix Wet Ingredients: Add the sugar, eggs, melted butter, and vanilla extract to the mashed bananas. Stir until well combined.
  • Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, matcha powder, baking soda, baking powder, and salt.
  • Mix Wet and Dry Ingredients: Gradually add the dry mixture to the wet ingredients, stirring just until combined. Avoid overmixing; a few lumps are fine.
  • Transfer to Loaf Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes. To check for doneness, insert a toothpick into the center; it should come out clean or with a few crumbs.
  • Cool Down: Once baked, remove the loaf from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
