  • 1/2 cup softened butter
  • 1 cup sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mash the ripe bananas until smooth. The more ripe the bananas are, the sweeter your bread will taste.
  • In a separate bowl, cream together the softened butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  • In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the banana mixture, stirring just until combined. Be careful not to overmix.
  • Pour the batter into a greased 9x5 inch loaf pan.
  • Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
