Ingredients
  

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 teaspoon salt
  • 1 tablespoon water (if needed)
  • 1 tablespoon water (if needed)
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach (or your favorite vegetables)
  • 1 pound ground beef or Italian sausage (optional)
  • 2 cups marinara sauce (store-bought or homemade)
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh basil, chopped

Instructions
 

  • Make the Dough:
    In a spacious mixing bowl, blend together the flour and salt. Create a small well in the center and add the eggs into this well.If the dough feels overly dry, incorporate a tablespoon of water.This resting time helps the gluten relax, which makes the dough easier to roll out later.
  • Roll Out the Noodles:
    Lightly dust your work surface with flour. Cut the dough into four equal pieces and keep the unused pieces covered.Using a pasta machine or rolling pin, roll out one piece of dough to your desired thickness (about 1/16 inch). Cut the rolled dough into sheets that will fit your baking dish.
  • Prepare the Filling:
    In a bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, fresh spinach, and ground beef or sausage (if using). Mix until well combined.
  • Assemble the Lasagna:
    Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of your baking dish.Place a layer of noodles over the sauce, then spoon half of the ricotta mixture over the noodles. Add a third of the remaining mozzarella cheese and some marinara sauce.Repeat the layering process until all ingredients are used, finishing with a final layer of noodles, marinara sauce, and the remaining mozzarella and Parmesan cheese.
  • Bake:
    Cover the baking dish with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes or until the cheese is golden and bubbly.Allow the lasagna to rest for 10-15 minutes before slicing to help the layers set.

  • Lasagna can be stored in the refrigerator for up to four days or frozen for up to three months.
  • Thaw frozen lasagna in the refrigerator overnight before reheating.
