Ingredients
  

  • 1 lb Ground beef or Italian sausage
  • 2 tbsp Olive oil
  • 1 cup Chopped onion
  • 2 cloves Minced garlic
  • 28 oz Crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried oregano

  • Salt (to taste)
  • Pepper (to taste)

  • 1 medium Zucchini, sliced

  • 2 cups Spinach (fresh or frozen)
  • 1 medium Bell peppers, chopped
  • 15 oz Ricotta cheese
  • 2 cups Shredded mozzarella cheese
  • 1 cup Grated Parmesan cheese
  • 1 large Egg
  • Fresh basil (optional)
  • 9 sheets Lasagna noodles (regular or no-boil)

Instructions
 

  • Preheat the oven.
  • Sauté the onion and garlic, then add meat and cook until browned.
  • Stir in the crushed tomatoes and seasonings to make the sauce.
  • Cook the vegetables separately.
  • Combine cheeses and egg in a bowl.
  • Layer the ingredients in a baking dish (sauce, noodles, cheese, veggies).
  • Bake and let it rest before serving.
