Ingredients
  

  • 2 cups cooked chicken, shredded or chopped

  • 1/4 cup jalapeños, diced (remove seeds for less heat)

  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 cup celery, chopped
  • 1/2 cup red onion, diced
  • 2 tbsp lime juice
  • to taste Salt and pepper
  • Optional 1 avocado (diced)
  • Optional 1/4 cup fresh cilantro (chopped)
  • Optional cooked bacon (for topping)

Instructions
 

  • Prepare the chicken by shredding or chopping it into bite-sized pieces.
  • In a large mixing bowl, combine mayonnaise, Greek yogurt, lime juice, salt, and pepper to create the dressing.
  • Add the chicken, diced jalapeños, chopped celery, and red onion to the dressing mixture. Gently fold to combine until everything is well-coated.
  • Let the salad chill in the refrigerator for at least 30 minutes to enhance the flavors.
  • Serve on lettuce wraps, in sandwiches, or with tortilla chips.

Notes

  • This salad can be made a day in advance. Store it in a sealed container in the fridge.
  • Adjust the number of jalapeños based on your heat preference.
