Homemade Lasagna Noodles Recipe

Ingredients
  

  • 2 cups all-purpose flour

  • 3 large eggs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • Water (as needed)

Instructions
 

  • In a mixing bowl, create a well with the flour and crack the eggs into the center. Add olive oil and salt.
  • Gradually mix the flour into the eggs, then knead the dough by hand for 8–10 minutes until smooth and elastic.
  • Wrap the dough in plastic wrap and let it rest for 30 minutes to relax.
  • Once rested, roll out the dough on a lightly floured surface to about 1/16 inch thick, or use a pasta machine for even rolling.
  • Cut the dough into lasagna-sized sheets.
  • If using immediately, layer fresh noodles directly into your lasagna. For storage, refrigerate for up to 3 days or freeze for up to a month.

Notes

  • You can swap half the all-purpose flour with whole wheat flour for added fiber and a nutty flavor.
  • For spinach noodles, blend spinach into the eggs before mixing.
  • If you don't have a pasta machine, a rolling pin works fine.
