Ingredients
  

  • 3 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs

  • 1/4 cup melted butter (or vegetable oil)
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup shredded coconut
  • 1/4 cup chopped macadamia nuts (optional)

Instructions
 

  • Prepare the Bananas: In a large mixing bowl, mash the bananas until smooth.
  • Mix the Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt.
  • Combine the Wet Ingredients: Add the granulated sugar, brown sugar, eggs, melted butter (or oil), and vanilla extract to the mashed bananas. Mix well.
  • Incorporate the Dry Ingredients: Gradually add the dry ingredients into the banana mixture, stirring just until everything is combined.
  • Add the Pineapple and Coconut: Gently fold in the crushed pineapple and shredded coconut.
  • Transfer to Pan: Pour the batter into your prepared loaf pan and smooth the top with a spatula.
  • Bake: Place the pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve: Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Enjoy!
