  • 1/2 cup apple slices (thinly sliced)
  • 1/2 cup grapes (halved)
  • 1/4 cup strawberries (sliced)
  • 1/4 cup blueberries
  • 1/4 cup almonds, walnuts, or pecans (chopped)
  • 1/4 cup feta cheese (optional)
  • 1/4 cup yogurt-based dressing or light vinaigrette

Instructions
 

  • Grill the chicken: Season the chicken breasts with salt, pepper, and your favorite herbs. Grill them until fully cooked (about 6-7 minutes per side). Let the chicken rest for a few minutes before slicing it into strips or bite-sized pieces.
  • Prepare the fruits and veggies: While the chicken cooks, slice the apple, halve the grapes, and slice the strawberries. Prepare the mixed greens by washing and drying them.
  • Assemble the salad: In a large salad bowl, combine the mixed greens, apple slices, grapes, strawberries, and blueberries. Add the grilled chicken on top.
  • Add the crunch: Sprinkle the chopped nuts (almonds, walnuts, or pecans) and feta cheese (optional) over the salad.
