  • 3 medium Ripe Bananas
  • 2 cups Einkorn Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder

  • 1/2 teaspoon Salt
  • 1/2 cup Honey or Maple Syrup
  • 2 large Eggs
  • 1/3 cup Melted Coconut Oil or Butter
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Optional: Nuts or Chocolate Chips

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C).
  • Prepare the Pan: Grease and flour a loaf pan or line it with parchment paper.
  • Mash the Bananas: In a large bowl, mash the ripe bananas until smooth.
  • Combine Wet Ingredients: Add honey or maple syrup, melted coconut oil, and vanilla extract to the mashed bananas. Mix well.
  • Mix Dry Ingredients: In another bowl, combine einkorn flour, baking soda, baking powder, and salt. Stir until evenly mixed.
  • Combine Mixtures: Gradually add the dry ingredients to the banana mixture and stir until just combined.
  • Fold in Add-ins: If using, gently fold in the nuts or chocolate chips.
  • Pour the Batter: Pour the batter into the prepared loaf pan and smooth the top.
  • Bake: Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean or with a few crumbs.
  • Cool: Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
