Ingredients

  • 3 medium ripe bananas (mashed, the riper, the better for sweetness)
  • 1 1/2 cups all-purpose flour (you can substitute with whole wheat flour for a heartier version)
  • 2 teaspoons baking powder (main leavening agent in this recipe)
  • 3/4 cup sugar (adjust sweetness to your preference)
  • 1/4 teaspoon salt (enhances the flavor balance)
  • 1/2 cup melted butter (adds moisture and richness)
  • 2 large eggs (room temperature works best)
  • 1 teaspoon vanilla extract (optional, but adds a warm, sweet aroma)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a large mixing bowl, mash the bananas until smooth.
  • Add the melted butter to the bananas, followed by sugar, eggs, and vanilla extract. Stir to combine.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually fold the dry ingredients into the banana mixture, mixing until just combined.
  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.

Notes

  • For extra flavor, you can add chocolate chips, walnuts, or cinnamon to the batter.
  • Use overripe bananas for the best sweetness and moisture.
  • You can substitute the sugar with honey or maple syrup for a more natural sweetener.
  • Freezing: Wrap cooled banana bread tightly in plastic wrap and foil for up to 3 months.
