Ingredients
  

  • 2 cups Cooked Chicken Breast
  • 1 cup Dried Cranberries
  • ½ cup Sliced or Slivered Almonds
  • 1 cup Chopped Celery
  • ¾ cup Greek Yogurt
  • 1 tablespoon Dijon Mustard

  • 1 tablespoon Honey (optional)
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Chopped Fresh Parsley

Instructions
 

  • Prepare the chicken by cooking it and letting it cool, then shred or dice it.
  • In a large bowl, combine the cooked chicken, dried cranberries, and sliced almonds.
  • In a separate bowl, mix Greek yogurt, Dijon mustard, honey, salt, and pepper to make the dressing.
  • Pour the dressing over the chicken mixture and toss until evenly coated.
  • Gently fold in chopped celery and fresh parsley.
  • Chill in the refrigerator for at least 30 minutes before serving.
  • Serve over mixed greens, in a sandwich, or with your favorite sides.
