Ingredients
  

  • 2 cups cooked chicken, shredded or cubed
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh tarragon, chopped
  • 1/4 cup almonds or walnuts (optional for added crunch)
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the cooked chicken, celery, red onion, tarragon, and almonds (if using).
  • In a separate bowl, whisk together the mayonnaise or Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth.
  • Pour the dressing over the chicken mixture and toss everything together until evenly coated.
  • Cover the bowl and refrigerate for at least 30 minutes to let the flavors meld together.
