- 2 cups Cooked chicken (shredded)
- 1/2 cup Mayonnaise
- 2 stalks Celery (chopped)
- 1/4 cup Onion (chopped)
- 1/2 cup Shredded cheese (cheddar or mozzarella)
- 4 slices Bread (whole grain or sourdough)
- to taste Salt
- to taste Pepper
- Optional Bacon, avocado, fresh herbs (dill or parsley)
In a medium-sized bowl, mix the shredded chicken, mayonnaise, chopped celery, and onions. Season with salt and pepper to taste.
Lightly butter each slice of bread.
Spread the chicken salad mixture onto one side of each bread slice.
Sprinkle shredded cheese on top of the chicken salad.
Heat a skillet over medium heat.
Place the assembled sandwiches in the skillet and cook for 3–5 minutes on each side, or until the bread is golden brown and the cheese is melted.
Remove from the skillet and serve immediately. Optional: Add bacon or avocado for extra flavor.
