This easy-to-make recipe combines tender shredded chicken, crunchy vegetables, sweet pickle relish, and a creamy dressing that’s perfect for sandwiches, salads, or snacks. Ingredients
  

  • 3 cups cooked, shredded chicken breast
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons sweet pickle relish
  • 1/2 cup diced celery
  • 1/4 cup finely chopped onion
  • Salt and pepper to taste
  • Optional: 2 boiled eggs, chopped
  • Optional: 1/2 cup grapes, halved
  • Optional: 1/4 cup chopped pecans or almonds

Instructions
 

  • Step 1: Cook and shred the chicken. Boil chicken breasts until cooked through, then shred using two forks or a stand mixer. If using rotisserie chicken, shred it and set aside.
  • Step 2: In a large mixing bowl, combine mayonnaise, Dijon mustard, and sweet pickle relish. Stir until the mixture is smooth and well-combined.
  • Step 3: Add salt and pepper to taste, and fold in the diced celery and finely chopped onion.
  • Step 4: If you’re using boiled eggs, grapes, or nuts, gently stir them into the mixture now.
  • Step 5: Add the shredded chicken into the mixture and stir until the chicken is well coated with the dressing.
  • Step 6: Cover and chill the chicken salad in the refrigerator for at least an hour to allow the flavors to meld.

Notes

  • If you prefer a sweeter version, add halved grapes or chopped apples to the salad.
  • Use Greek yogurt instead of mayo for a healthier twist.
  • This chicken salad can be made ahead and stored in an airtight container in the fridge for up to 3 days.
