Ingredients
  

  • 1 lb Chicken Breast (grilled, shredded, or cubed)
  • 2 large Carrots (julienned or grated)
  • 1/2 cup Mayonnaise (or Greek yogurt as a substitute)
  • 1 tbsp Dijon Mustard (optional)
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice (freshly squeezed)

  • Salt & Pepper (to taste)
  • 2 tbsp Fresh Herbs (parsley or dill), chopped (for garnish)

Instructions
 

  • Cook the Chicken: Season the chicken with salt, pepper, and your preferred spices. Grill or poach the chicken until fully cooked (165°F or 75°C internal temperature). Shred or cube the chicken once cooled.
  • Prepare the Carrots: Peel and julienne or grate the carrots. For a smoother texture, you can grate them.
  • Combine the Ingredients: In a large bowl, combine the shredded chicken and carrots. Add mayonnaise, Dijon mustard, lemon juice, and olive oil.
  • Mix Well: Stir the mixture until everything is evenly coated. Season with salt, pepper, and fresh herbs (parsley or dill).
  • Serve: Garnish with extra herbs and serve immediately or refrigerate for a few hours for the flavors to blend.
