- 2 large Carrots (julienned or grated)
- 1/2 cup Mayonnaise (or Greek yogurt as a substitute)
- 1 tbsp Dijon Mustard (optional)
- 2 tbsp Olive Oil
- 1 tbsp Lemon Juice (freshly squeezed)
- Salt & Pepper (to taste)
- 2 tbsp Fresh Herbs (parsley or dill), chopped (for garnish)
Cook the Chicken: Season the chicken with salt, pepper, and your preferred spices. Grill or poach the chicken until fully cooked (165°F or 75°C internal temperature). Shred or cube the chicken once cooled.
