  • 1 cup grape tomatoes, halved
  • ½ cup shredded carrots
  • ½ cup roasted corn kernels
  • ½ cup bacon crumbles
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil

  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ⅓ cup avocado lime ranch dressing (store-bought or homemade)

Instructions
 

  • Coat chicken breasts with olive oil and season with salt, pepper, paprika, and garlic powder.
  • Allow the chicken to marinate for 15 minutes.
  • Grill or bake the chicken until fully cooked (internal temperature of 165°F/75°C).
  • Let the chicken cool slightly, then slice into thin strips.
  • Arrange the romaine lettuce and baby spinach as the base in a large salad bowl.
  • Top with shredded carrots, grape tomatoes, roasted corn, bacon crumbles, and shredded cheese.
  • Add the sliced chicken on top.
