Ingredients

  • 3 medium ripe bananas

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup (60g) softened butter
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk or milk

Instructions

  • Prepare the Ingredients: Mash the ripe bananas in a bowl, making sure there are no large chunks.
  • Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Prepare the Bread Maker: Add the wet ingredients (butter, sugar, eggs, vanilla, and milk) into the bread maker’s baking pan. Then, add the mashed bananas.
  • Add Dry Ingredients: Sprinkle the dry mixture over the wet ingredients in the pan.
  • Start the Bread Maker: Select the "Quick Bread" setting on your bread maker and start the baking process.
  • Check the Loaf: After the baking cycle is complete, check the loaf with a toothpick. If it comes out clean, your banana loaf is ready to enjoy!
  • Cool the Loaf: Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

  • For a more flavorful loaf, consider adding a handful of chocolate chips or chopped nuts.
  • If the batter appears too runny, you can add a little more flour to thicken it.
  • You can substitute the buttermilk with regular milk if preferred.
