Ingredients

  • 2 medium ripe bananas
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter (melted)
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1-2 tablespoons milk (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a small loaf pan (approximately 8x4 inches) or line it with parchment paper.
  • Mash the bananas in a bowl until smooth. Set aside.
  • Mix dry ingredients: In another bowl, whisk together the flour, baking soda, and salt.
  • Combine wet ingredients: In a separate bowl, whisk the melted butter and sugar until well combined. Add the egg and vanilla extract, mixing until smooth.
  • Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients. Stir until just combined. Be careful not to overmix to avoid dense bread.
  • Add mashed bananas: Fold in the mashed bananas gently, ensuring they're evenly distributed.
  • Bake the batter in the prepared loaf pan for 40-45 minutes. Insert a toothpick into the center, and if it comes out clean or with a few moist crumbs, the bread is done.
  • Cool: Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
