  • 3 large Ripe bananas (mashed)
  • 1 cup Crushed pineapple (drained)
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter (melted)
  • 3/4 cup

    Brown sugar

  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Optional: Chopped walnuts or pecans

Instructions
 

  • Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease a loaf pan and set it aside.
  • Mash the Bananas: In a large bowl, mash the ripe bananas until smooth.
  • Mix Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt.
  • Combine Wet Ingredients: Add melted butter, brown sugar, eggs, and vanilla extract to the mashed bananas. Stir until well combined.
  • Incorporate Pineapple: Gently fold the drained crushed pineapple into the banana mixture.
  • Add Dry Ingredients: Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  • Optional – Add Nuts: Fold in chopped nuts if desired.
  • Pour and Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 60-70 minutes or until a toothpick comes out clean.
  • Cool and Serve: Allow the bread to cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.
