  • 3 medium ripe bananas
  • 1/2 cup mayonnaise
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon (optional)
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • Mash the Bananas: In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
  • Mix Wet Ingredients: Add the mayonnaise, eggs, and vanilla extract to the mashed bananas. Stir until combined.
  • Add Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
  • Combine: Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  • Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
