  • 2 ripe bananas, mashed
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) white sugar (or brown sugar)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups (240g) cake flour
  • 1 tsp baking soda
  • 1/4 tsp salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • In a large bowl, beat the softened butter and sugar together until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the mashed bananas and vanilla extract.
  • In a separate bowl, sift together the cake flour, baking soda, and salt.
  • Gradually fold the dry ingredients into the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
