Ingredients
  

  • 2 large ripe bananas

  • 3.5 cups all-purpose flour
  • 1 packet (2 ¼ teaspoons) yeast
  • 1 cup warm water
  • ¼ cup brown sugar

  • 1 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 4 cups water (for boiling)

Instructions
 

  • Mash the Bananas: In a large mixing bowl, mash the ripe bananas until smooth.
  • Activate the Yeast: In a small bowl, dissolve the brown sugar in the warm water. Stir in the yeast and let it sit for 5-10 minutes until frothy.
  • Mix Dry Ingredients: In another large bowl, whisk together the flour, salt, and cinnamon.
  • Combine Wet and Dry: Add the yeast mixture and mashed bananas to the dry ingredients. Stir until a dough forms.
  • Knead the Dough: On a floured surface, knead the dough for 8-10 minutes until smooth and elastic. Add more flour if too sticky.
  • Shape the Bagels: Divide the dough into 8 pieces. Roll each into a ball and poke a hole in the center. Gently stretch to about 1-2 inches in diameter.
  • Let the Bagels Rise: Place the shaped bagels on a parchment-lined baking sheet. Cover with a towel and let them rise for 30-60 minutes.
  • Boil the Bagels: Bring 4 cups of water to a boil and add 1 tablespoon of baking soda. Boil the bagels for 1 minute on each side.
  • Bake the Bagels: Preheat the oven to 425°F (220°C). Place the boiled bagels on the baking sheet and bake for 20-25 minutes until golden brown.
  • Cool and Serve: Let the bagels cool on a wire rack before slicing and serving.
